Homemade Breakfast Sausage

Ingredients:

1 pound ground pork (preferably 80/20 ground pork)
3 tablespoons ground sage
1 tablespoon dried thyme
1 teaspoon fennel seeds, crushed slightly
½ teaspoon black pepper
¼ teaspoon ground nutmeg
½ teaspoon salt (or to taste)
3 tablespoons brown sugar
2 tablespoons olive oil

Instructions:

Combine the dry ingredients: In a large bowl, whisk together the sage, thyme, fennel seeds, black pepper, nutmeg, and salt.
Add the meat: Add the ground pork to the bowl with the dry ingredients. Using your hands, gently mix until everything is evenly combined. Be careful not to overmix, as this can make the sausages tough.
Form the patties: Divide the sausage mixture into 8 equal portions. Shape each portion into a patty, about ½-inch thick.
Heat the skillet: Heat the olive oil in a large skillet over medium heat. Once hot, add the sausage patties, leaving some space between them.
Cook the Patties: Place the sausage patties on a pan and brown them for approximately 4-5 minutes on each side or until well cooked. An internal temperature of 160°F is recommended for consumption purposes.

Serve: Appetizing breakfast sausage patties should be prepared and served with a hot or warm breakfast, including but not limited to scrambled eggs, pancakes or oatmeal and/or hash brown’s.

Tips:

How to change the spiciness of the recipe: This is one of those recipes that is quite forgiving. For those who like it hotter, add some red pepper flakes in the dry ingredients for a little heat.

For breakfast sausage links: If you are planning to prepare breakfast sausage links instead of the patties cut out sausage casings as shown in the next picture. These casings should be soaked in cold water for 30 minutes before using them. Using a sausage stuffer or spoon fill in the sausage mix in the sausage casings. If making links twist every inch on the sausages to make sausages and ties. Then, make the links in a frying pan or on the grill for the same amounts of time as the patties.
Make it ahead of time: Make sausage patties and place them on a cookie sheet. Freeze for 30 minutes.
